Are you looking for another delicious breakfast option? This gluten-free chocolate banana pancake recipe can easily be adapted to more easily accessible household ingredients if you don’t have an allergy/intolerance to gluten. No cacao or buckwheat flour? Try cocoa and flour.

Ingredients

Pancake Mix

  • 3 x ripe (brown) bananas, 1 ripe for display
  • 1 egg
  • 1/2 cup coconut milk
  • 1 tbsp rice malt syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 2/3 cup buckwheat flour
  • 2-3 tsp cacao powder
Chocolate Sauce
  • 1/4 cup coconut oil (melted)
  • 1/4 cup rice malt syrup
  • 2 tbsp cacao powder
  • 2 tbsp rice malt syrup

Method

  1. Mash your banana with a fork
  2. Add wet ingredients to banana and mix
  3. Add dry ingredients and mix
  4. Cook pancakes in coconut oil
  5. Use remaining oil for chocolate sauce, add other ingredients and mix
  6. Top your pancakes with toppings e.g chocolate sauce, yoghurt, banana, peanut butter and peanuts
