Oats! A humble staple in the lives of most… Oats are the kind of food that fills you up with the warmth of being a child again. They are taken for granted by most, but for those with Coeliac Disease, they are often riddled with the risk of cross-contamination. Although oats are naturally gluten-free, they are processed in the same factory as other wheat products and therefore cannot be consumed by those with Coeliac Disease. It is because of this that Australian food laws don’t allow oats to be advertised as “gluten-free” and Coeliac Australia advises caution when selecting/consuming oats. Not only is quinoa naturally gluten-free, but it’s also a true wholegrain and will help you start your day off with a good headstart on your protein and fibre requirements. Plus, in regular “overnight oats” fashion, they’re made to prepare the night before and have on the go the next day!
Overnight Quinoa “Oats”
Serves: 2
Prep: Approx. 15 minutes
Ingredients
- 1 cup cooked quinoa
- 1 ½ – 2 cups milk of choice
- 4 tbsp chia seeds
- 2 tbsp chopped almonds
- 2 tbsp honey
- 1 tsp vanilla extract
- 1 cup berries
Method
- Add all ingredients (except berries) to a mixing bowl and mix together. Set aside for 10 minutes. If the mixture is too thick add some more milk.
- Transfer mixture to jars or containers and top with berries of choice.
- Leave overnight and enjoy the next day!
