Ingredients
Pancake Mix
- 3 x ripe (brown) bananas, 1 ripe for display
- 1 egg
- 1/2 cup coconut milk
- 1 tbsp rice malt syrup
- 1 tsp baking powder
- 1 tsp cinnamon
- 2/3 cup buckwheat flour
- 2-3 tsp cacao powder
Chocolate Sauce
- 1/4 cup coconut oil (melted)
- 1/4 cup rice malt syrup
- 2 tbsp cacao powder
- 2 tbsp rice malt syrup
Method
- Mash your banana with a fork
- Add wet ingredients to banana and mix
- Add dry ingredients and mix
- Cook pancakes in coconut oil
- Use remaining oil for chocolate sauce, add other ingredients and mix
- Top your pancakes with toppings e.g chocolate sauce, yoghurt, banana, peanut butter and peanuts
