As we wave goodbye to the winter months and say g’day to the Australian summer, we know that you’re all looking for those refreshing summer feeds to keep the family cool, calm and happy in the heat. It can be a real struggle sometimes! So, our dietitian from Newcastle, Demi, wanted to share her summer salad dressing recipes for you all to try! Both of the following recipes make for great dressing alternatives, that are lower in salt and in sugar. Plus, they both hold for about five days in the fridge!

Yoghurt Ranch Dressing

Ingredients

  • ¾ cup Greek yoghurt
  • 1 clove garlic, crushed or 1 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 teaspoons Dijon mustard
  • Juice of ½ lemon

Add all ingredients in a jar with an air-tight lid, shake well until combined & enjoy.

Vinaigrette Dressing

Ingredients

  • ¾ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey

Add all ingredients in a jar with an air-tight lid, shake well until combined & enjoy.
